Homemade Chocolate Recipes

Most people prefer to eat sweets in moderation. Why is this so hard to do? Let’s face it. Sugar is addictive. Some individuals I work with feel that sugar is an all or nothing conversation and that staying away completely works best. Others find this approach leads to restriction/overindulging swings. A healthy approach to sugar is not “one size fits all.”
This chocolate recipe provides ONE serving of chocolate.
For those that are trying to find moderation, I have created the single serving homemade chocolate recipe. It does not live in the cupboard. It needs to be made nightly. It is gluten-free, dairy-free, soy-free (hard to find in chocolate bars). And it is arguable the best tasting chocolate I have ever had.
The Basic Recipe (1 serving)
2 tsp coconut oil
1 Tblsp unsweetened cocoa powder
2 tsp coconut palm sugar
1-2 tsp milk alternative
sprinkle of sea salt
(optional) raw pistachios or other nuts, dried fruit
Melt coconut oil if not liquid. Stir in all ingredients except pistachios and milk. Line very small bowl with plastic wrap. Place nuts, dried fruit (as desired) on plastic wrap and pour chocolate mixture over top. Place in fridge for 30 minutes then enjoy.
This variation adds some medicine to your already medicinal cocoa-rich chocolate. I love using mushroom extract powders. Real mushroom is one of the vendors we have used for these powders. Medicinal mushrooms like reishi, maitake, cordyceps and chaga add a nice addition to chocolate. I served the below recipe at a workshop series and it got RAVE reviews.
Medicinal mushroom chocolate (1 serving)
1 Tblsp raw cocoa powder
1 Tblsp coconut palm sugar
1 Tblsp coconut oil
1 tsp mushroom extract powder (cordyceps, reishi, or other)
1 tsp nondairy milk
pinch of sea salt
Nuts (optional)
First add cocoa powder, sugar, melted coconut oil, salt and mushroom powder. Stir well then pour in the milk and stir again. Pour or scrape into a small bowl lined with plastic wrap or a silicon mold, sprinkle with nuts as desired. Refrigerate for 30 minutes. Enjoy.
**TIP - Remember to buy low lead and cadmium cocoa powder. I like to buy Navitas Organics for this purpose.
